Santa Lucia is a farm run by Fincas Mierisch in Comayagua, Honduras. Established in 2014, it was revived from near-abandoned conditions and is now dedicated to cultivating exotic and heirloom varieties.
The Triángulo plot, meaning “Triangle,” is Santa Lucia’s newest Gesha planting. It was planted in 2018 using the same seed stock as the Casona Gesha, but it cups differently. Compared to Casona’s more floral, delicate character, Triángulo tends to show a brighter profile with more citrus and fruit.
Cherries for this lot were picked on March 28, 2025 at peak ripeness, then floated, depulped, and dry-fermented for 36 hours before washing. The coffee was dried slowly for 16 days on raised beds inside a greenhouse designed for 50% shade, then rested as parchment for at least a month to stabilize humidity before milling at Cadexsa.
