Boba isn't just for tea, it's great with coffee too! This chewy and sweet topping is perfect in a latte, cold brew, brewed coffee, and more. Making boba at home takes a bit of time, but the outcome is so worth it.
Ingredients
1/4 cup of dried tapioca pearls
700 ml of hot water
1-2 tbsp sweetener (honey, sugar, brown sugar, etc) for sugar water
3/4 cup of hot water for sugar water
1 cup of your favorite brewed coffee
1/3 cup of milk
1 tsp sugar (optional)
1 cup of ice
Boba (Tapioca Pearls)

Directions
Making the Boba
In a medium sized pot, boil 700 ml of water and add the tapioca pearls. Boil the pearls on medium heat for 20 minutes or until soft and chewy.
Turn off the heat, and let the pearls sit in the hot water for 15 minutes.
Strain the pearls in a coriander or strainer and rinse with cold water.
In the same pot or different one, add your sugar and water and mix on low heat until the sugar dissolves.
Add the pearls into the sugar water and let it soak for 15 minutes on low heat. Careful not to boil off all the water.
Coffee Drink
Brew one cup of your favorite coffee (you could make cold brew, etc.)
In a glass, add your tapioca pearls, ice, coffee, and top with your milk. Enjoy!
