Perched high in the mountains of Palestina, Huila, Finca Las Palmas has been the home and livelihood of Efrén Echeverri and his family for over two decades. Six years ago, they embarked on a transformative journey into specialty coffee, combining tradition and innovation to elevate their craft. Spanning 7.2 hectares, the farm produces exceptional varietals like Pink Bourbon, Yellow Bourbon, Caturra, and Gesha, with every stage of production a true family effort, reflecting their shared dedication to quality.
This Gesha is crafted with meticulous care, beginning with hand-harvesting and careful selection of ripe cherries. The coffee undergoes a 20-hour barrel fermentation to build complexity, followed by pulping and an additional 60 hours of fermentation. It is then dried slowly on raised African beds for 20 days, producing a vibrant and refined cup with exceptional clarity and depth.
